Tabouli Salad is a Middle eastern salad typically made with Bulgur wheat, parsley and other herbs. Here is a variation to the salad made using cracker wheat also called Dalia or wheat rava in India. Bulgur wheat is different from cracked wheat. Whole bulgur grains can be added to baked goods or used in soups and stews. Cracked wheat is similar other than it is not usually precooked (steamed or parboiled). Ingredients Cracked wheat - 1/4 cup Chopped Parsley - 1/2 cup Chopped Cilantro - 1/2 cup Chopped Tomatoes - 1/2 cup Chopped Cucumber - 1/2 cup (optional) Chopped Onions - 1/2 cup Chopped Mint leaves - 1/2 cup Olive oil - 2 tbsp Lemon juice - 2 tbsp Water to cook cracked wheat Salt as needed Method 1. Microwave cracked wheat for 5 mins in water and let it soak for 15-20 mins till they turn soft. Drain water and keep cracker wheat aside. 2. Add tomatoes, onions, parsley, cilantro, mint, lemon juice, olive oil, cucumbers and cooked cracked wheat. Add salt and mix well. Notes 1. You can also use dried parsley if you dont have fresh Parsley available. 2. Replace cracked wheat with Quinoa for a different variation.
